I saw kinda unpolished operation which typically happens at new open restaurant. Waiters didn’t explain which sauce to use for which sushi etc. I also understood that why high end sushi restaurants only have a counter because it’s impossible to provide authentic customer service and tasty sushi if they have overt tables which chefs can’t take care of directory. #sushi#tokyo#ebisu#寿司#恵比寿#東京
